INGREDIENTS
900 g mashed potatoes
Matured Olive PDO olive oil - ORGANIC
2 large tbsp. tablespoon chopped chives
2 large tbsp. tablespoon chopped parsley
25 g of broken olives from the Vallée des Baux-de-Provence AOP
1 C. teaspoon of coarse salt for the cooking water
3 pinches of salt
Mill pepper
PREPARATION
Wash then peel the potatoes, cut them into cubes. Place the cubes in a large saucepan, cover with water and add the coarse salt. Leave to cook for 15 to 20 minutes depending on the size of the pieces. Drain the potatoes then return them to the saucepan. Coarsely mash them using a potato masher, leaving small pieces.
Add the AOP Olive Mature olive oil, the herbs and the olives cut into pieces then mix. Adjust the seasoning with salt and pepper.
