650g Cod fillet
20 very thin slices of smoked brisket
1 C. tablespoon of whole-grain mustard
Matured Olive PDO olive oil - ORGANIC


Spread the bacon to make a mat the width of the cod fillet without leaving any space between the slices. Brush generously with mustard and add the cod fillet. Roll up tightly, tie everything up and place in a baking dish.
Drizzle with a drizzle of PDO Olive Mature olive oil and bake for 20 minutes at 200°C, until the cod is cooked through and the bacon is nicely browned. Serve hot with the cooking juices.
